Breakfast

French toast
Add 1 egg, 100ml milk, cinnamon, vanilla extract to a bowl and mix. Dip bread into the mixture and cook. Add fruit, golden syrup and cinnamon.

Apple porridge
Cook cut up apple with 1tsp of honey and a dash of cinnamon for 10mins on medium/low heat. Boil 3/4 cup of milk and add 1/2 cup of oats. Cook until a thick consistency and add cinnamon. Add hot water to make it thinner. Put apple and porridge into a bowl with yogurt, honey and cinnamon.

Banana pancakes
Pancakes: 2 mashed bananas, 2 eggs, dash of cinnamon, 1 tablespoon of Greek yogurt, splash of vanilla, 2 tablespoons of flour. Toppings: Fruit and honey
Lunch

Pesto orzo salad
Orzo with pesto, tomatoes, black olives, chickpeas, cucumber, feta cheese, sweetcorn, lettuce, pesto, lemon juice, sour cream

Spring roll salad
Rice noodles, cucumber, carrot, red cabbage, avocado, spring onion, prawns, peanut butter dressing

Tunacado bagel
Bagel, pesto, tomato, avocado, tuna mousse (2tbsp mayo, 1/2 sliced spring onion, tuna, lemon, salt and pepper)

Summer salad
Lettuce, sweetcorn, cucumber, red beans, tomato, pepper, red onion, chicken, guacamole
Dinner

Spicy creamy pasta
Boil 250g penne. Melt 2 tbsp butter, sauté 1 tbsp ginger garlic paste + 1 chopped small onion till golden. Add 3 tbsp tomato puree + ½ cup pasta water. Stir in ½ tsp each chilli powder, salt, pepper, chilli flakes, oregano, parsley; cook 2 mins. Add 1 cup cream + ⅓ cup milk, simmer. Mix in mozzarella + penne.

Pulled chicken tacos
Cook 2 chicken breasts, add 1½ tsp smoked paprika, 1 tsp garlic paste, ½ tsp chilli, 1 tsp cumin, 1 tsp cajun, ½ red pepper, ½ red onion, 3 tbsp tomato purée, 200ml stock. Simmer till thick. Serve in 5 mini tortillas with cheese.

Salmon feta pasta
Place 2 salmon fillets, 2 cups of feta, 3 cups of cherry tomatoes in baking dish with spices and olive oil and cook for 20-25 mins at 200C. Mix and mash all these baked ingredients and then add cooked penne.

Loaded rice burrito
Marinade 450g chicken breast in 1 tbsp olive oil, 1 tsp cumin, garlic powder, paprika and S&P. Cook until fully cooked and golden then remove from pan and cut into small pieces. Cook 1 diced onion, 2 minced garlic cloves and 1 diced red pepper for 3 mins. Add 1 cup of rice, mix, add 1 can of diced tomatoes, 2 cups of broth, garlic powder, paprika and S&P, 1 can of black beans and corn. Then simmer

Mexican tortilla lasagne
Sauté 3 minced garlic cloves, 2 chopped onions, 1 tbsp olive oil and S&P until soft and golden. Add 500g of minced beef and cook for 5 mins. Add taco seasoning and 400-500ml of tomato sauce then cook for 5 mins. Add 1/2 cup of cream cheese, 1/2 cup of cream and 1 cup of corn and simmer. Put layers of tortilla, sauce, cheese, and then tomatoes on the top layer. Bake in oven at 220C for 25 mins.
Dessert

Banoffee pie
Crush 250g crackers, mix with 110g melted butter, press in pie dish, chill. Heat 1 can condensed milk, 80g brown sugar, 75g butter till thick and golden. Cool 10 min, spread on crust. Top with 2 sliced bananas. Whip 1 cup cream, spread on top. Grate 100g dark chocolate over. Chill 2 hrs.

Cinnamon rolls
Dissolve 50g yeast in 2½ cups lukewarm milk, add 2½ cups more milk. Stir in 1 tbsp sugar, ⅓ cup sour cream, ½ tsp cardamom, 1 egg. Mix in 325g flour + ½ tsp salt, then 150g butter, then 325g flour. Rise 1 hr. Mix filling: 200g butter, 3 tsp cinnamon, 50g sugar, 100g brown sugar, 1 tbsp cornstarch. Roll dough, spread filling, roll up, slice. Rest 30 min, egg wash, bake 180°C 20-25 min.
